Banana Split Cupcakes Recipe

So...a few days ago I caught an episode of the TV show "DC Cupcakes", where one of the sisters made a Banana Split Cupcake.
Which caused me to try and find a recipe for it.
I didn't find the exact one. I found one that I liked (Gimme Some Oven)...and then added a step from another recipe I found (Beantown Baker).


I took some progress photos...but I'm no expert at taking food pictures...so they're not that great...but you get the idea :)


Banana Split Cupcakes Recipes -

Ingredients -
- 2 cups granulated white sugar
- 1 3/4 cups all-purpose flour
- 3/4 cups cocoa powder
- 1 1/2 tsp. baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup mashed ripe bananas (about 2 medium sized bananas)
- 1 cup warm water
- 1/2 cup milk
- 1/2 cup canola oil
- 1 1/2 tsps pure vanilla extract


Cream Cheese Frosting Ingredients:
- 8 ounces cream cheese, at room temperature
- 4 Tbsp butter, at room temperature
- 4 cups powdered sugar
- 1 tsp vanilla extract


Optional Toppings:
- hot fudge sauce
- maraschino cherries
- sliced bananas
- sprinkles
- nuts


To Make Cupcakes:

Preheat oven to 350 degrees F (180 degrees C) and place rack in the center of the oven. Line 20 regular-sized muffin cups with paper liners or spray each cup with a non stick vegetable spray.

In a large bowl whisk together the sugar, flour, cocoa powder, baking powder, baking soda and salt.

In another large bowl, whisk together the eggs, mashed bananas, water, milk, oil, and vanilla extract. Add the wet ingredients and stir, or whisk, until combined. Pour or scoop the batter into the muffin cups, filling almost full, and bake for about 20 to 25 minutes or until a toothpick inserted in the center of the cupcake comes out clean.

(**Don't be alarmed - the batter is pretty thin, but it turns out well)

Remove from over and let cool on a wire rack.


To Make Frosting:

In a medium bowl, blend together cream cheese, butter and vanilla. Gradually add powdered sugar, mixing well until it's incorporated. Use immediately. The frosting will harden in the fridge, so plan on bringing it back to room temperature if you must refrigerate it before frosting the cupcakes.

Once the cupcakes were cooled you can use a small cookie cutter to cut out the center of the cupcake.
The part I used, which is pictured, is from my mom's set for making homemade donuts. The donut holer is just the right size.

After I did that, I sliced up some bananas.
For the depth of the whole it took about 4 pieces of slice bananas to fill it up. I also added some hot fudge in the middle of the bananas.

I then covered each cupcake with frosting and added the nuts.
Because there are bananas in the cupcakes I refrigerated them.

When I was ready to serve them I then added the chocolate on top as well as the cherry.
